For the Malis Oullié family, gastronomy is a family story. Above all, it is a passion that has endured for 4 generations in Nathalie Malis’s family. In the early 1900s, Étienne Oullié, Nathalie’s great-grandfather, began working in pastry-making.
He trained and worked in the great establishments of the world, in London, in Paris, then in Cairo, Egypt. Back in France, he settled in Aniane, in the Hérault, where he created what would become the family pastry shop, in the small streets of the circulade. From his inspirations came a signature specialty for the village: the Croquignole, a small dry biscuit shaped like an “S” or a shuttle, delicately scented with orange blossom. Then it was Marius Oullié, Nathalie’s grandfather, who took over.
In his time, the second emblematic specialty of the Oullié house was created: the small pine-nut meringue, known as the Pignon d’Aniane. Marcel, her father, took over the business in the 1970s, continuing the pastry-making tradition. Nathalie was born in 1970 in the pastry shop. The workshop is on the ground floor, with the apartment above. Much of her childhood was spent in the workshop. The passion for chocolate was already there!
The pastry shop on Rue du Mazel closed its doors for good in 1994. Twelve years later, in 2006, Nathalie and Olivier Malis took over the renowned pastry shop in Castries, still in the Hérault. Since 1998, the chef, Rachid Lahcène, has overseen the production side of the pastry workshop. Nathalie focuses on chocolates, macarons and biscuits, and Olivier on bread-making, viennoiseries and pastries.
To this day, the company continues the tradition of pastry-making and baking, and highlights its values: artisan expertise, quality raw ingredients, for 100% homemade products.
In 2020, we turned the page to devote ourselves to restoring this beautiful building, in Saint-Jean-de-Blaignac in Gironde, on the banks of the Dordogne, in the heart of a natural and agricultural landscape, notably shaped by the great wines of Saint-Émilion.
