A professional 25 m² laboratory dedicated to chocolate making is located at the heart of the Master’s house, on the ground floor, facing the vineyards.

Specializing in artisan chocolate making near Saint-Émilion, Nathalie leads workshops on chocolate, biscuit making, and other specialties. Your guest house and table d’hôte, Malis Castéra, invites you to share this expertise.

Nathalie will introduce you to the art of chocolate making:

  • the different stages of manual chocolate tempering.
  • Creating chocolate fillings: pralines, ganaches
  • Molding
  • Decorations
  • Bars, bark, palets…

The workshop is equipped with 2 mechanized tempering machines, one of which includes an enrobing belt.
